After watching a few episodes of the Netflix show "Ugly Delicious" I got inspired to make something very creative and fortunately it turned out great!! Made Tandoor tofu pizza with quinoa crust! A weird but delicious mix of Indian Italian and vegan cuisine!
Ingredients
For the crust
1 cup quinoa flour
3-4 tbsp tapioca starch
1/2 tbsp salt
Fresh or dry Italian herbs (I used thyme and oregano)
For the tandoor “sauce”
1/2 red onion
1/2 tomato
1 Thai/Indian chili
2-3 of garlic
Approx 1 tbsp ginger
Oil for sautéing
2tbsp Vegan Yogurt (or cashew paste)
Spices ( salt , turmeric, paprika, cayenne, cumin, coriander and Garam Masala)
For the tandoor tofu
4 oz tofu (1/2 pack)
Same spices as for the sauce
3 tbsp vegan yogurt
2 tbsp oil
Toppings
onion
red and green bell peppers
Vegan cheese.
Garnish
Cilantro
Basil
Recipe
Soak the Quinoa flour in hot water for about an hour.
Grind it to a fine paste in a blender, mix with tapioca starch, herbs and salt.
Plate it on a parchment paper to desired shape and bake at 375 F for 20-25 minutes until you start to see it get dry. Do not worry of cracks appear in the Dough 😊
Cut the tofu into cubes and pat them dry.
Mix the salt and spices along with vegan yogurt and oil to creat a paste and coat the tofu cubes in that paste.
Let it marinate for 30-45 minutes and then bake it at 400 F for 40 minutes. The marinade should dry up after baking.
To make the curry paste chop and sauté onions, garlic, ginger till soft then add tomato and all the spices and cook till you get an almost paste like consistency.
Then blend the mix with vegan yogurt in a blender (this is optional if you want to make a chunky sauce.)
Combine the ingredients, crust sauce tofu and toppings. Top with some vegan cheese and bake at 375 F for 25-30 minutes.
Garnish with fresh cilantro and basil and enjoy!
