Kimchi Spelt Pancakes



These are kimchi pancakes filled with radish kimchi and made from spelt flour which is high in fiber and is also gives great texture and taste to the pancakes. They are spicy and tasty :)


 

Ingredients


For the pancakes

1 1/2 cup spelt flour

1 cup water (approx)

4 large mushrooms (any type will do I used shittake)

2 small shallots finely chopped

2 spring onions finely chopped

1 cup kimchi radish

2 -3 Tbsp kimchi juice

1 tbsp soy sauce or coconut aminos

1 tbsp gochujang paste (or chili garlic sauce)

1 tbsp salt or according to taste

Oil for cooking


For the dipping sauce

2 tbsp soy sauce

1/2 cup water

1 tbsp chili garlic paste


 

Recipe


To create the dipping sauce just mix all the ingredients.


Chop the spring onions, kimchi, shallots and mushrooms into small pieces

Add the choppied veggies to a mixing bowl , add the spelt flour, soy sauce, chili sauce, salt and kimchi juice. Mix it well. Add the water and mix it. The mixture should get a batter like consistency similar to but thicker than pancake batter.


Add oil to a pancake pan on medium heat. Add the batter to a pan. Cook on one side for about 3-4 minutes and then once the mix looks dry flip and cook on another side for 3-4 minutes or until both sides are cooked properly.



Serve hot with the dipping sauce and enjoy! :)
